This small traditional Japanese cutting board is carved from a single piece of gingko wood and is perfectly sized for use as a small cheese plate or as a cutting board for your bar cart. Long used by professional chefs in Japan, these manaitas are made from Gingko wood, which provides a firm cutting surface that is also gentle on your knife and resistant to dents due to the self-recovering nature of the wood. Fine grained, smooth to the touch, and relatively lightweight, craftsmen carefully select the piece of wood and only the part suitable for manaita is carved out and finished by hand, resulting in a solid board with a beautiful grain.
